i pickled all the beets the other day, but made sure to save all the tops!  beet greens are one of my favorite things to eat, sauteed in a bit of garlic and onion with some white wine, stock or pickled beet juice..  they are full of flavor and taste like: beets!  surprise!

i have been a small bit stressed this week, as we are doing a lot of cooking and at the same time, jumping on the phone and the computer and over to the kitchen to make sure that things keep moving ahead.  and that is my excuse for using a pre-made, store-bought pizza crust.  girls gotta eat and lately i gotta eat something fast!

pulled the green leaves from the stems and blanched the greens, then the stems in salt water.  caramelized onion in olive oil and added the stems to soften and sweeten up.  then garlic for a second and the greens.  seasoned with pepper and lots of crushed flakes.  on the crust, a thin layer of tomato paste and olive oil.  a thin layer of “pizza cheese” (i guess it is mozz?), the GOODS and some goat cheese.  baked until i could wait no longer..  mmmm!
